Sweet potato & eggplant stack

The eggplant and tomato sauce give this meal a warm and hearty flavour, and there’s something about a stack – they just look fancy!  Don’t be fooled though, this recipe is dead easy, and the results are delicious.

1 cup sweet potato mash (simply cook the sweet potato and mash with a drizzle of olive oil and some salt & pepper)
1 eggplant
1 cup Italian style tomato sauce
Baby spinach to serve


1)      Slice the eggplant into thin slices, about 5-10mm thick.

2)      Grill the eggplant slices until soft and cooked through.

3)      Put a spoonful of pasta sauce on the plate and top with a slice of eggplant, then place a spoonful of sweet potato on top and continue to alternate between the eggplant and sweet potato.

5)      Top with the tomato sauce and serve with fresh baby spinach (or other green vegetables work well too).
